Carrot Halwa is a indian pudding made with fresh carrots, milk, sugar. Traditionally carrot Halwa us made during winter as carrots are in full season. In India halwa is savored during winter months and during festivals such as Diwali, Eid, and Holi. Most folks from the US who eat at Indian restaurants would have seen this dessert labeled as carrot pudding.
Raw cashews (1/4 cup).
Ground cardamom (1/2 tsp.)
Raw sugar and milk.
roasted almond slivers.
To make cashew paste place in water to soak for half an hour.
In a medium sauce pan with a steamer cook carrots until get brown.
Now pour milk in another bowl and boil for 5minutes.
Add cashew paste, raisins, and cardamom and cook until heated through, about 2 minutes.
Taste the dish and add raw sugar, or jaggery as desired. Garnish with almond slivers before serving.
Now Carrot Halwa is ready.
